Use your favourite big game meat in this stew. This recipe uses elk, but you can easily substitute ram, venison, or moose.
Ingredients:
- 2.5 lbs elk, cut into 1 inch cubes
- 2 tbsp flour
- 1 package mushrooms (450g)
- 6 stalks celery
- 3 carrots
- 1 onion
- 2 cloves garlic
- 3 potatoes
- 1 cup brewed coffee
- 1 cup dark beer
- 1 cup beef broth
- 1 tsp Worcestershire sauce
- 1 tsp paprika
- Salt and pepper to taste
Directions:
- Put cubed meat into a ziploc bag with flour and toss to coat (do in batches if necessary).
- Heat bacon grease in pan and brown meat on all sides - be sure not to crowd the pan.
- Dice all vegetables.
- Add all ingredients to slow cooker and cook on low for 6-8hours.
- Optional: Remove lid during last hour of cooking to reduce the stew.
