Chimichurri Venison Sleds

Looking for a quick and easy recipe for weeknights that will add a pop of flavour? Check out these venison chimichurris!

Ingredients:

Chimichurri sauce:

  • 1/2 cup parsley - chop fine
  • 1/2 cup cilantro - chop fine
  • 1 tsp dry oregano
  • 3-4 garlic cloves - chop fine
  • 1 red chilli small , or 1 tsp chilli flakes
  • 2 tbsp red vinegar
  • Juice fr 1/2 lime
  • 1 tsp coarse salt, & 1/2 tsp pepper
  • 1/2 cup olive oil
  • Throw it all in a bowl and mix!

Directions:

Venison:

Throw 1 lb venison in a different bowl and add: salt, pepper, raw egg, ~ 1 tbsp of panko crumbs, 1/4 small onion - chop fine, and 1 tbsp chimichurri sauce - mix well by hand.

Sleds:

Cut 2-3 sub buns in half and to the cut side add: butter, sprinkle of feta, 2-3 spoon fulls Chimichurri, and then spoon the raw meat on top of this and pat down to cover. Then, simply grill or fry meat-side down on med heat for 6-8 min!

Add more Chimichurri sauce on the meat when done, cut in half and serve.

Serves 2 hungry people, or could easily be shared among 4.
